Texas Tech University’s livestock, meat and wool judging teams completed spring with a sweep of intercollegiate judging competitions at the Houston Livestock Show and Rodeo. Dave Haukos pushed through the dead salt marsh aster, waist-high plants common along the Texas coast that looked out of place in north central Lubbock. Cold, dry wind blowing through the field chapped lips and cracked soil desperate for planting season moisture, but Haukos slammed a shovel into the ground at a small clearing and produced a surprise - damp, sticky earth. Texas Tech University’s meat judging team proved, once again, it’s simply a cut above the rest. The four-member team edged out the defending national champions to earn its fourth consecutive championship at the Houston Livestock Show & Rodeo Intercollegiate Meat Judging Contest held March 8. A second Texas Tech team placed fourth in the overall team standings. (more…)
