Matthias Bougreau

Matthias Bougreau is a French native coming from the Loire Valley, area famous for its castles and Chenin Blanc wines. Upon completion of his Master's degree in Microbiology & Molecular Biology, Matthias worked as a Project Manager in Microbiology for a pharmaceutical startup, but soon changed his career path to his passion for wine. During his studies towards the French National Diploma in Enology, he had a chance to work in great wineries and to learn from extremely knowledgeable people, such as the former stage manager of Domaine de la Romanée Conti, and for the Languedoc's world famous Gérard Bertrand's Chateau l'Hospitalet, where he learned how to make great wines. As the top class graduate, Matthias was immediately hired as a Winemaking Consultant and advised about 70 wineries in the famous AOCs of Languedoc on the different facets of wine production.

Matthias later met Dr. Guy Loneragan, Professor of Food Safety and Public Health at Texas Tech University. Their common professional interests for microbiology and wine led Matthias start his PhD studies at Texas Tech. His doctoral dissertation focused on the biodiversity and the finding of "new" fermenting microorganisms in Texas High Plains vineyards.

Once Matthias passed the Wine & Spirit Education Trust (WSET) Level 2 and Level 3 Awards in Wine, he became passionate about wine education. He started his teaching career at Texas Tech in 2016 by teaching "The Science of Wine", "Wine Quality Control and Analysis", and "Wines of the World" courses. Matthias also teaching WSET courses for Texas Tech students and the local community


 

Veronique Cecilia Barretto
A San Antonio, TX native, Cecilia Barretto has been studying wine for 14 years. She received her Master's in Wine Business at the Burgundy School of Business in Dijon, France. During this time she also achieved her Level 3 Advanced Certification of the Wine, Spirits & Education Trust (WSET). Since May 2014 she has worked for Pedernales Cellars as the Brand Developer, Outside Event/Sales Coordinator, and Winery Educator. In addition to her role at the winery, Cecilia facilitates wine education and wine speaking events in the greater San Antonio area for both private and public clients. In her constant desire to continue her wine education, she is in the middle of the rigorous examination process for the Level 4 WSET Diploma. She plans to one day sit for prestigious Master of Wine exam of which only 340 people hold this title in the world.

Tim H. Dodd, Ph.D.

Tim H. Dodd holds an MBA in Marketing and a Ph.D. in Consumer Economics from Texas Tech University. He teaches graduate courses in the Department of Hospitality and Retail Management at TTU. Dr. Dodd is also the Associate Dean for Administration for the College of Human Sciences at Texas Tech University and Finance, as well as a James C. and Kailee M. Young Regents Professor.
