Sam Jackson was raised in Stephenville, Texas, where he was active in 4-H and FFA. Dr. Jackson grew up on a diversified livestock farm and raised sheep, cattle and horses. After graduation, he attended Texas Tech University where he earned a B.S. in Animal Production. While at Tech, he was a member of both the National Champion Livestock (1985) and Wool (1986) Judging teams. After graduation, Dr. Jackson attended Texas A&M University where he earned an M.S. in Physiology of Reproduction (1988). While at A&M, he coached the 1987 National Champion Livestock Judging Team. Dr. Jackson returned to Texas Tech and earned his Ph.D. in Animal Science (1993) and joined the Animal Science faculty.

He is currently an Associate Professor & the Associate Chair. He serves as the coordinator of undergraduate advising, supervises the Horse and Wool Judging teams and teaches Introductory Animal Science, Live Animal Evaluation, Sheep and Goat Production, and Growth and Development. His specialty is sheep production and growth and development of farm animals. Dr. Jackson has been an industry leader in research with sheep that carry the callipyge gene for extreme muscling. Dr. Jackson raises registered Rambouillet sheep and show lambs as a hobby and is a carded judge with the American Paint Horse Association and the Palomino Horse Breeders of America and has judged sheep, cattle and horse shows in 20 different states and four countries.

Dr. Jackson and his wife, Tanya, have two children, Logan and Melanie.
