Chef Adán Medrano Dinner Menu

Red Jalapeño Champagne Cocktail, “Southwest Sunrise”

  • “The Southwest Sunrise” begins with lush peach nectar to ground us in our region, the richness and beauty of Georgia.  It is blended with the juice of Guava, native to Mexico, Central America and South America.  Tamarind adds another layer of richness along with a hint of Jalapeño jelly. “The Southwest Sunrise” is then finished with Mexican lime juice and a dash of sparkling water, refreshing and effervescent as our future: one community, many histories, working together for our common good.

Appetizers

  • Homemade corn tortillas, Queso Fundido, & Serrano Avocado Salsa, and Pecan Stuffed Mushrooms

Soup and Salad

  • Chile Poblano and Chayote Soup
    • Chayote and chiles roasted with onion and Mexicana crema topped with pepitas 
  • Smoked Trout Salad with Yerbaniz-Chipolte Dressing
    • Frisée, celery, blistered tomatoes, and smoked trout with yerbaniz-chiptle dressing, yucca, and bowfin roe 

Entrée Choice 1: Albondigas De Chile Ancho

  • Roasted meatballs in an ancho chile puree with tomatoes and garlic. Served with pinto bean sopes and cilantro rice.

Entrée Choice 2: Vegetarian Stuffed Poblano Chile Rellenos

  • Roasted stuffed peppers with quinoa, tomatoes, black beans, and sweet potato lightly fried topped with a tomato caldito. Served with pinto bean sopes and cilantro rice

Dessert: Almohadas De Jicama Y Fresca & Mesquite Candy Balls 

  • Jicama and strawberries in puff pastry topped with sugar 
  • Mesquite powder and agave topped with roasted sesame seed
