Objectives

  1. To provide participants with a comprehensive overview of current developments and trends in good meat production and processing practices to maximize quality, safety and competitiveness.
  2. To familiarize participants with the latest technologies, equipment and ingredients for the development of value added meat products by lectures, hands-on activities, demonstrations and plant tours.
  3. To prepare participants with the know-how, criteria and fundamentals for problem-solving and process optimization in meat processing and leadership initiatives for product development.

Study Abroad in South Africa

Students will learn the challenges and solutions surrounding the triple burden of disease, food and nutrition insecurity as well as dietary patterns and gain hands on experience in community outreach by visiting community gardens and centers and conduct workshops and information and education sessions on proper nutrition and food preparation. Texas Tech students will also stay with South African local families for a weekend for a 100% immersion experience.

Study Abroad Experience - Kenya

Overview: Students will learn the challenges and solutions surrounding the double burden of over nutrition and food insecurity, gain hands on experience in community outreach by visiting community gardens and centers and conduct workshops and information sessions on proper nutrition and food preparation. Texas Tech students stay in Kenyan local families for a weekend for a 100% immersion experience.

Location: This course is an International experience and as such will travel through Kenya. Students will be traveling together and will remain a traveling cohort.

Pre-requisites: Junior standing/ graduate GPA 2.85 or greater

Experts from the University of Texas Tech visit Uruguay

Dr. Guy Loneragan, Dr. Kendra Nightngale and PhD student Diana Ayala shared their knowledge and experiences in April 2015 in Uruguay.

The visit was organized by the Food Safety planning unit of the Ministry Livestock, Agriculture and Fisheries (UCPIA / MGAP), the Coordination Committee on Animal Health Research (CCISA) and the Inter-american Institute for Cooperation on Agriculture (IICA).

The visit aimed to strengthen the technical capacity of official, private and academic sector in the pathogen control during the pre and post harvest to control pathogens in the meat chain. In addition, meetings were held to determine future projects between Uruguay and Texas Tech.

Understanding the Impact to the Food Industry and Identifying Outreach and Research Opportunities for Texas Tech Marcos Sanchez, PhD

Purpose: The objective of this workshop is to strengthen knowledge on FSMA proposed rules. This will contribute to achieve preparedness of stakeholders and exporters, maximizing the impact of capacity building initiatives to minimize the disruption of market access with U.S. trading partners.
