Program Overview
The Community Nutrition course provides an overview to the field of community nutrition and its application to health promotion and disease prevention. Students learn how to perform community nutrition assessment and program planning, implementation, marketing, and evaluation using nutrition education models and materials that are appropriate for various target audiences. Physical activity is included as a component of community nutrition assessment and education. The Emerging Issues in Food Science and Nutrition course focuses on developing the skills to critically evaluate and intelligently discuss nutrition research, nutrition guidelines, government regulations, and health & public policy related to food science and nutrition by exposing them to current issues.
