Raul Palacios has been practicing as a Registered Dietitian Nutritionist for 7 years. He has worked in a variety of settings including clinical dietetics, foodservice management, and outpatient counseling. Mr. Palacios received his bachelor's and master's degree in nutrition & Dietetics at Texas Tech University as well as completing his dietetic internship with Texas Tech. He currently continues to work in the clinical setting in his free time to maintain his clinical skills as a dietitian and to ensure he teaches current practices. 

Raul currently serves as the Didactic Program In Dietetics (DPD) Director and is passionate about working with undergraduate nutrition students and seeing them move on to the next step of their journey. He has a keen interest in artificial intelligence (AI) and its influence in nutrition, dietetics education, and other broader applications to better our healthcare system.
