Meat science leader receives AMSA's Distinguished Teaching Award
Chance Brooks, an associate professor of meat science with Texas Tech's Department of Animal and Food Sciences, has been selected to receive the American Meat Science Association's 2011 Distinguished Teaching Award. The honor will be given at the association's annual Reciprocal Meat Conference on June 22 at Kansas State University in Manhattan.
Brooks' teaching innovations include development of a public food show for his processed meats class and creation the first honors course in meat science at Texas Tech in 2005. In addition, Brooks advises more than 100 undergraduate students and serves on the committees of 21 graduate students.
In addition to his teaching duties, Brooks' research focuses on value-added meat products, meat packaging systems, food safety, and meat palatability. He has secured more than $2.7 million in extramural funding since 2000.
Awards for Brook include the American Society of Animal Science-Southern Section Outstanding Young Animal Scientist Award in Education (2011); Texas Tech Alumni Associations New Faculty Award (2007); the American Meat Science Association's Achievement Award (2006).
Prior to joining the Texas Tech faculty in 2003, Brooks served as an assistant professor at Oklahoma State University. He earned his bachelor's and master's degrees in animal science from Texas Tech. His doctorate in animal science is from Texas A&M.
Champaign, Illinois-based AMSA is a professional society. Its role is to provide the forum for all interests in meat "" commercial, academic, government and consumer, officials said. One of its primary goals is to foster community and professional development among individuals who create and apply science to efficiently provide safe and high quality meat.
