Janghan Choi Joins Texas Tech’s Dept. of Animal & Food Sciences

Janghan Choi, an international expert in molecular nutrition and immunology, has been named an Assistant Professor of Nutrition & Microbial Ecology within Texas Tech University’s Department of Animal & Food Sciences, according to officials within the Davis College of Agricultural Sciences & Natural Resources. He stepped into his new teaching and research post on Jan. 1.

Choi’s research and teaching specialization is in animal nutrition with a focus on monogastric animals, and his research program primarily focuses upon advancing monogastric animal nutrition and gut health through the application of cutting-edge molecular and omics techniques. 

Prior to joining the Texas Tech faculty, Choi served as a postdoctoral researcher with the USDA-ARS National Poultry Research Center in Athens, Georgia. A native of Daejeon, South Korea, Choi earned his bachelor’s degree in animal science from Chungnam National University in Daejeon, South Korea and his master’s degree in animal science from University of Manitoba in Winnipeg, Canada. His doctorate in poultry science is from the University of Georgia in Athens, Georgia.

Tech’s Department of Animal & Food Sciences is housed in a modern research and teaching facility and is supported by several off-campus units, including an Equestrian Center, Equine Therapeutic Riding Teaching and Research Center, Grantham Companion Animal Research Facility, and an Agricultural Field Laboratory with canine, sheep/goat, swine, beef cattle, Burnet Center, and feed mill units.

There are approximately 30 faculty members in the department, many of whom are leading researchers in their respective fields. Areas of research excellence include meat science and muscle biology, food science and safety, animal nutrition, health and welfare, and companion animal science. The department continues to experience unprecedented growth in student enrollment (Fall 2024) and is comprised of more than 1,469 students (Graduate: 95 / Undergraduates: 1,374).
