Arredondo has worked as an exhibitions curator and coordinator since 1980. In his years of service to TTU Landmark Arts since 2003, Arredondo has distinguished himself by energetically organizing exhibitions that are significant at multiple levels for the School of Art and the greater Lubbock Community. He is also an ardent advocate of collaborations with organizations across campus and in the Lubbock Community. In addition, he has served on the University Public Art Collection Committee for the TTU System for 10 years between 2003 and 2013, as President of the Sculpture Network of Texas in 2010, and on the Advisory Board of the Texas Biennial in 2011 and 2013. He currently serves on the Board of the Charles Adams Studio Project in Lubbock.
