Choi’s research and teaching specialization is in animal nutrition with a focus on monogastric animals, and his research program primarily focuses upon advancing monogastric animal nutrition and gut health through the application of cutting-edge molecular and omics techniques.

Raider Red Meats’ mission and selling point before it was even started was to produce the best student on the planet, and meat science was the number one reason the department needed it.
