The Executive Chef will coordinate all culinary activities at Skyviews Restaurant which includes, but is not limited to: estimating food consumption, purchasing food, and controlling food costs; developing standardized production recipes to ensure consistent quality; planning and pricing menus; ensuring proper equipment operation and maintenance and appropriate safety and sanitation in the kitchen. This position will also be responsible for training and managing kitchen personnel and students to better organize the learning environment for the Restaurant, Hotel, and Institutional Management program. The executive chef must plan and be able to cook both lunch and dinners and may on occasion, organize special catering events. This position will also serve a dual role of coordinating dining room service with other department staff and instructors.
